Preserving the Sanuki Tradition

At Udon Ippuku in Kokubunji-cho, Takamatsu, Kagawa, we preserve the tradition of Sanuki Udon while making our noodles by hand every day with all our heart.

To achieve the unique chewiness and smooth texture characteristic of Sanuki Udon, we are particular about every step of the process, from selecting the wheat flour to the water ratio and dough aging time.

Aiming for a bowl that our customers will call "delicious," we continue to devote ourselves every day.

Selected Wheat Flour

We carefully select domestic wheat best suited for Sanuki Udon. We adjust the daily blend according to temperature and humidity to create the best dough.

Water of Sanuki

We use water nurtured by the climate of Sanuki. As an essential ingredient that affects the taste of udon, we are also particular about the quality of water.

Traditional Handmade Method

We inherit the old-fashioned handmade method that produces unique chewiness and flavor that machines cannot replicate.

Homemade Iriko Dashi

We are proud of our flavorful dashi broth, carefully made from dried sardines from the Seto Inland Sea and kelp from Hokkaido.
